Banana Oatmeal Chocolate Chip Peanut Butter Cookies
1/2 cup butter
3/4 cup brown sugar
1 1/3 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 mashed banana
1/2 cup peanut butter
1 1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 tsp. baking powder
1/2 teaspoon salt
1 1/2 cups roll oats
2 cups semi-sweet or dark chocolate chips
- Preheat over to 350 degrees
- In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy.
- Add the eggs one at a time, beating well with each addition, then stir in the vanilla, bananas and peanut butter.
- Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture.
- Finally, stir in the rolled oats and chocolate chips.
- Drop by rounded spoonfuls onto an unprepared cookie sheet. Bake for 8 to 10 minutes in the preheated oven.
- Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely and store in an airtight container.
Strawberry Banana Smoothies
4 cups sliced strawberries
1 medium banana, sliced
1 6 oz carton vanilla low fat yogurt
1 cup ice cubes
1 kiwifruit sliced, optional
In a blender, combine strawberries, banana, and yogurt; cover and blend until smooth. With blender running, add ice cubes, one at a time, through hole in the lid; blend until smooth. Pour into 8 small glasses. If desired, garnish with kiwifruit; serve immediately. Makes 8 (about 1/2-cup) servings.
Orange Banana Smoothies
1 1/2 cups fresh squeezed orange juice
1 tablespoon freshly squeezed lime juice
1 cup strawberries, tops removed, sliced
1 medium banana, sliced
Combine the orange juice, lime juice, strawberries, and banana in a blender and process until smooth. Refrigerate until cold.
