Try this easy Quiche Lorraine recipe. It’s based on Martha White’s Southern Sampler cookbook (not really French… ha!), but as usual, I made my modifications to make it yummier! You can wrap it in aluminum foil and freeze it. Put it in your lunchbox, and when it thaws, you can eat it cold or warm it up in the oven. Makes for a great breakfast when you have to get up at 0330 and nothing’s open! 

Directions:
Preheat oven to 375F. Grease a 9 “ quiche or pie pan. In a small skillet, saute onion in butter until transparent. Combine onion and remaining ingredients. Stir until well mixed. Pour mixture into pan, and bake 30 – 45 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving. Makes 6 – 8 servings.
